I was craving some chocolate yesterday and I have been eating cacao nibs when I get a craving, but I wanted something different. I buy naturebox snacks for my boys so they can have some healthy snacks at home. I picked some chocolate chia granola this time and it was a great choice. I used it as a base for these treats and it was delicious. I also tried using coconut palm sugar for the first time and was very pleased with the result. The flavor is wonderful, with a nutty, caramel twist that provided a great sweetness without overpowering the other flavors. These require no baking, and taste like a no bake cookie!
What you need:
.5 c cacao nibs
3 tbs cocoa powder
.25 c coconut palm sugar plus 1 teaspoon for garnish
.5 c peanut butter
1 bag naturebox chocolate chia granola
In a food processor, pulse together all ingredients until they come away from the sides of the bowl and form a ball. You can add more peanut butter if they are not sticking together.
Scoop out 1 tablespoon of dough and roll into a ball. Set aside on parchment paper and continue until you have used all the dough.
Sprinkle each ball with the coconut palm sugar and place in the fridge until ready to serve.
Store in an airtight container for up to 7 days.
I absolutely loved these little treats. They were just what I needed and provided lots of fiber, potassium, and protein. The cacao nibs added some extra crunch and the palm sugar gave them the perfect amount of sweetness. I will be making these again and again.
This is a treat for me, and one that is actually providing my body with the nutrients it craves while satisfying my sweet tooth. Don’t give up because you think eating healthy is going to make you miss out on things. You don’t have to sacrifice, just find alternatives! When you stop eating processed foods and refined sugars, your tastebuds adjust so you don’t want those things anymore and you can find some pretty amazing foods that replace all the junk.
