Who doesn’t love a good waffle? I could eat them for breakfast, lunch, and dinner. The possibilities are endless and the flavor combinations can be so wonderful.
I taught my first Boot Camp class tonight and came home with some crazy hunger. Suddenly, waffles pop into my head. I know, weird right? I have been dealing with a nasty head cold and all I have wanted to eat is carbs. Since I had just been through an intense full body work out and needed to replenish some nutrients, I decided to add protein! What could be better than my favorite breakfast food loaded with protein and delicious toppings? Vega protein is my new favorite, and I have been trying to put it into everything. Of course, chocolate waffles began to sound really delicious.
Try these. Seriously.
Grape seed oil
Vega protein powder
Prepare the waffle mix according to instructions. You will use the grape seed oil and almond milk to replace vegetable oil and milk. Add a scoop of Vega powder and some extra milk (2-3 tablespoons) for consistency and stir well to get out all the lumps.
When the waffles are cooked, top them with cacao nibs, agave syrup, and toasted coconut. I am gonna be honest, I ate two. These were absolutely delicious. So fluffy. Just enough chocolate and the crunch of the cacao and coconut, my mouth is watering again. I am looking forward to breakfast tomorrow because I saved one. My son liked these too, he thought it was dessert. If you need a way to get some protein, this is a tasty way to do it.
