I needed some chocolate tonight, so I pulled out a few of my favorite ingredients and started thinking. These clusters were just the thing to fix my chocolate cravings, and I made enough to last through the weekend. You only need four ingredients: almonds, coconut, coconut oil, and dark chocolate. You can use baking chocolate, chocolate chunks, or chocolate chips. These were very easy to make and took about 20 minutes from start to finish.
Start with 1 cup of dark chocolate (chips, chopped, or chunked), 1 tablespoon coconut oil, 1 cup of chopped almonds, and 1/2 cup of flake coconut. In a glass bowl, melt the chocolate and coconut oil in 15 second intervals in the microwave. While the chocolate is melting, roughly chop the almonds (set aside 2 tbs. for garnish) and mix them with the coconut. When the chocolate is melted, stir to make sure the oil gets mixed in and it is smooth. Pour the almonds and coconut into the chocolate in 1/4 cup increments, stirring with each addition. When the mixture sticks together, scoop out the dough onto a parchment lined sheet pan. Sprinkle the almonds you set aside on top of the clusters and freeze for 15 minutes, or until set.
Store them in an airtight container in the refrigerator and enjoy them whenever you need a chocolate break. These were perfect with a cup of coffee, and one was just enough. Sharing is optional.
