We LOVE green smoothies and since we drink them daily, I wanted to change it up a bit and find a dffierent way to serve them. This beautiful bowl full of nutrients is what I came up with. I decided to make a smoothie bowl and add some greek yogurt and fresh seeds, nuts, and fruit to enhance the flavor. The result was a delicious, power packed lunch that kept me satisfied and made my body happy.
Kiwi and spinach smoothie bowl:
2 c coconut water
2 c spinach
2 kiwi (skin on)
1 medium banana
1 c pineapple
1 c greek yogurt
2 tbs flake coconut
1 tbs chia seeds
In a blnder add the coconut water and spinach and blend on high for two minutes, or until the spinach is well blended.
Add the pineapple, kiwi, and banana and blend until all ingredients are smooth.
To make the smoothie thicker, use only one cup of coconut water so you can eat it with a spoon and it won’t be so runny.
In a bowl, add 1 c vanilla greek yogurt (or any yogurt you like) and fill half the bowl.
Pour 1 cup of smoothie into the other side of the bowl and top with chopped almonds, chia seeds, and coconut flakes. Stir it up and enjoy!
I paired mine with an apple and two carrots and drank 2 cups of water with it. This is a really simple way to mix up your smoothies and still get all the beneficial nutrients and vitamins that these foods have to offer. Leaving the kiwi skin on offers a lot of extra fiber and you won’t notice that the skin is there because it blends up nicely. Not only is this meal beautiful, you will feel energized, and full after eating it.
Think outside the box and mix it up if you are feeling bored with your food choices. It doesn’t take much!
